Before you worry that you’re going to have to make an entire batch of brownies and cookies for this recipe, don’t stress!! For this recipe, the brownies can be made from a box mix.
Obviously if you want to throw together your own chocolate brownie recipe, that’s totally fine too.

Tips and Tricks
- Use unsalted, not salted butter. Leave your butter out at room temperature for about 30 minutes before your start baking.
- Make your brownies from a box mix to save some time.
- When you’re making your cookie dough balls, don’t make them too big. The cookie dough has to hold the brownie inside the cookie dough, so if you make it too big, the structure won’t survive!
- I use milk chocolate chips in this recipe, but you’re welcome to use any additions you like: dark, white or semi chocolate chips, M&Ms, peanut M&Ms… it’s totally up to you.
Ingredients
- 1x Betty Crocker boxed brownie mix. Bake as instructed by HRH Betty.
- 3/4 cup + 1 tablespoon unsalted butter
- 1 cup brown sugar
- 1/4 cup granulated sugar
- 1 egg
- 2 cups + 1 tablespoon all purpose flour
- 2 teaspoon cornstarch
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup bittersweet chocolate chips
- 1 cup milk chocolate chips
Directions
- We’ll start with making the brownies. Get an 8×8 pan and line it with parchment. (I recommend getting scissors and cutting the parchment to fit the pan as well as possible because this will ensure your brownies don’t have a funky shaped edge.) Bake as directed by HRH Betty Crocker and make sure they cool for at least 30 minutes. Cut with a plastic knife if possible into small squares.
- Now for the cookie dough. Take the sugar and butter and combine with an electric hand mixer (if you have one) until the mixture is light and fluffy. Add in the rest of your wet ingredients and mix. Then add the dry ingredients (including the chocolate chips) and mix.
- Time for the fun part! Take a ball of cookie dough (the size of a cookie dough scooper!) and roll into a ball. Do this until you have a bunch of pairs (depending on their size, the number of pairs will vary). Now take a piece of brownie, flatten one of the cookie dough balls and place the brownie on top of it. Take another dough ball, flatten it, and sandwich it on top of the cookie dough already covered in brownie. Then pinch the edges of the cookie dough together until the brownie is hidden!
- Bake at 350F for 10 minutes or until the edges of the cookies are brown. Let cool for at least 30 minutes before enjoying. If you want to take it one step further, make my super simple cream cheese frosting recipe as the cookies cool and serve as a side to your cookie brownie!!
