Why make funfetti cookies?!
For starters, funfetti cookies are adorable to look at: those little sparks of color in the mixture?! SO cute. Plus, you can add all kinds of extras like chocolate chips, raisins, cranberries, white chocolate chips, dark chocolate chips… the list goes on. There’s something so deliciously fluffy about the inside of a funfetti cookie. There’s also sweet, but not too sweet. They’re also undeniably nostalgic. They immediately take you back to childhood birthday parties.
Basically, there’s no reason not to make these easy funfetti cookies.
Ingredients for funfetti cookies
- 1 dry cake mix (you can use Pillsbury, Duncan hines, Betty Crocker or any other big brand to make cookies from a cake mix!)
- 2 eggs
- 1/3 cup olive oil or vegetable oil
- 1/2 teaspoon salt
Instructions
- Preheat the oven to 350°F.
- Line a cookie sheet with parchment paper.
- In a large bowl, combine the eggs, oil and salt. Mix well!
- Add the dry cake mix. Mix until the mixture is smooth. If you want to add more sprinkles and/or chocolate chips, go right ahead!
- Take a 1 ounce cookie scoop to scoop out cookies 2 inches apart on the prepared cookie sheet (you don’t need a cookie scoop to do this!)
- Put the incredible funfetti cookie dough in the oven for 10 minutes or until the cookies have risen (they should be a little soft in the middle).
- Once done in the oven, let the cookies cool on the cookie sheet for3-5 minutes, then transfer over to a cooling rack for about 30 minutes!
