Top Tips for Vanilla Cupcakes From Scratch: What makes this vanilla cupcake recipe special? We don’t use any vanilla essence and we use full fat plain Greek Yoghurt! As for the cream cheese frosting, we also refrain from vanilla essence and use unsalted butter.
Vanilla Cupcakes Recipe
- 1 2/3 cup all-purpose organic flour
- 1 cup granulated or cane sugar
- 1/4 tsp baking soda
- 1 1/2 tsp baking powder
- 1/8 tsp salt
- 3/4 cup unsalted butter (melted)
- 3 egg whites
- 1/2 cup plain full fat Greek yoghurt
- 1/2 cup half and half
Directions:
- Set the oven to 350F. Get your cupcake holders prepared on a cupcake holder oven proof tray.
- Combine all ingredients till it’s smooth (a few small lumps and bumps are fine)
- Fill up each cupcake holder with the mixture until each holder is about 3/4 full.
- Bake for about 18 minutes or until you can stick a toothpick in the center cupcake and have it come out clean
Cream Cheese Frosting Recipe
- 8 ounces Philadelphia cream cheese
- 1/2 cup unsalted butter, softened
- 4 cups powdered sugar
- After letting the cupcakes cool for at least 30 minutes, combine all the ingredients (preferably with an electric whisk to save your arm!) and decorate the cupcakes however you like!
